Work starts on a CASK cookbook and guide to Irish ingredients

One of the two Irish partners in the CASK Climate Aware Seasonal Kitchen project, is non-profit organisation EurAV. Based in the greater Drogheda area, EurAV is a community media production and training specialist team, and one of their task in the CASK project is to develop a Seasonal Cookbook and Alternative Ingredient Guide.

“We’ve gathered the first material for the cookbook,” said Declan Cassidy, director at EurAV. “In Crete, became very clear is that the recipes are worth little or nothing without the right quality of ingredients. There is a market that moves around Chania, to a different locality each day. They close off a couple of streets and the producers set up stalls. It’s not just a dream for food lovers – it’s also perfect for anyone behind a camera. Wherever you point it, you get a shot.”

The cookbook will feature the recipes that ten Irish chefs will be challenged to make, based on Cretan traditional recipes, but using only Irish ingredients. Certain things simply don’t grow in Ireland, so the challenge is expected to see some interesting ideas for alternative, local ingredients. Watch this space!
