Free online CASK training coming soon!

As the dust settles on a wonderful one-day training and tasting evening for food service industry professionals that explored the benefits of using sustainable, local and seasonal Irish ingredients for internationally-inspired menus, the resources developed are currently being shaped into a free training course that will be available through this website.

The training will be self-directed, so food service industry learners will be able to work at their own pace. It will consist of five modules – each to be followed by a short test that must be passed before the learner can move on to the next module. Once all five modules have been successfully completed, the learner will receive a Climate Aware Seasonal Kitchen Certificate, issued by CASK Partners Sonairte – the National Ecology Centre of Ireland, the Mediterranean Agronomics Institute of Chania and EurAV European Audio Visual CLG, to show that they are taking the climate challenge seriously in their work.

Also available for download on this website, will be a Seasonal Cookbook and Ingredient Alternative Guide which will feature the recipes cooked on the live workshop day by our Irish and Greek chefs, as well as a list of Irish ingredients that can be used instead of imported ones.
