This cookbook is the result of the collaboration between top Irish and Cretan chefs, who took the ethos of the Mediterranean diet – local, seasonal and wholesome ingredients – and used it to re-imagine some Cretan classics using only Irish ingredients. The ten recipes in the book were cooked at a workshop in Sonairte, the National Ecology Centre of Ireland. The book also includes a database of imported ingredients that can be substituted for Irish ones.
